Remember all that leftover watermelon I had from cutting out stars?!
While I was cutting, I put all the remnants in ziploc freezer bags and popped ’em in the freezer.
Last summer I had a LOT of extra watermelon on hand and figured out it freezes great. The CSA I was involved in gave us 2 watermelons…PER WEEK! That’s a whole lotta watermelon when I’m the only one at our house that will eat it. It got to the point where I couldn’t physically eat another piece of watermelon. Never thought that would’ve happened! Instead of letting it go to waste, I began cutting and freezing it for my morning smoothies. I’ll add the frozen watermelon to green smoothies, but my favorite way to enjoy it is simply on it’s own in a slush.
With our temps in the 100’s this week, I’ve been making this watermelon slush almost daily! It is so refreshing and the perfect afternoon treat on these hot, muggy days.
Here’s what you need: (Print Me!)
- 2 cups frozen watermelon
- 1 to 1½ cup coconut water (enough to reach desired consistency)
- squeeze of lime juice
Add all ingredients to your blender, and blend until smooth. Fresh mint is also a delicious addition to this drink!
